Tricolor Cheese Tortellini With Carbonara Sauce
- Extra virgin olive oil - 1 Tbsp
- Butter - 1 Tbsp
- Onion, ¼" dice - 1 Tbsp
- Celery, finely chopped - 2 tsp
- Garlic, minced - ¼ tsp
- Bacon, cooked ¼" dice - 4 Tbsp
- Dry white wine - 2 Tbsp
- Heavy cream - ¾ cup
- Parmesan cheese, grated - 4 Tbsp
- Black pepper - pinch
- Salt - pinch
- Parsley, flat leaf, chopped - 1 Tbsp
- Tricolor Cheese Tortellini - 5 oz
- Melt butter in olive oil and saute bacon, onion, celery and garlic.
- Add wine and reduce by half by simmering.
- Add Heavy cream, ½ of the parmesan cheese, salt and pepper and simmer over low heat for 4-5 minutes or until desired consistency is obtained, stirring from time to time.
- Add parsley and simmer for 2 more minutes.
- Mix frozen tortellini and sauce in a bake/microwave container, loosely cover and microwave for 2-3 minutes (cooking time will vary with microwave wattage).
- Uncover, sprinkle with other half of parmesan cheese and place in hot oven until it turns light golden brown color and has a baked look to it. Garnish with chopped bacon and chopped parsley.
- If using Alfredo sauce, omit olive oil butter, onion, celery, garlic, heavy cream, salt and pepper.
