Lasagna Rollup With Puttanesca Sauce
- Olive oil (preferably extra virgin) - 1 Tbsp
- Garlic, minced - ½ tsp
- Crushed tomatoes - 1 cup
- Crushed red pepper - 1/8 tsp
- Kalamata olives, pitted, chopped - 2 tsp
- Capers, in brine, drained, rinsed, chopped - 2 Tbsp
- Anchovy - 3 fillets
- Sugar - ¼ tsp
- Parmesan cheese, grated - 3 Tbsp
- Cheese lasagna rollup - 2
- Heat olive oil and saute garlic anchovy and crushed red pepper until anchovy become paste.
- Gradually add crushed tomatoes, kalamata olives, capers and cook for 5 minutes.
- Place small amount of sauce in bottom of a bake/microwave container.
- Place the frozen Lasagna Rollup on the sauce and pour rest of sauce on pasta, loosely cover and microwave for 2-3 minutes (Cooking time will vary with microwave wattage).
- Uncover, sprinkle with parmesan cheese, place in hot oven and bake until cheese turns golden brown color and has a baked look to it.
- Garnish with chopped parsley.
- If using Pizza Sauce omit crushed tomatoes and salt.
- If using pre-made Pasta Sauce omit crushed tomatoes oil and garlic.
