5 Cheese Grand-i-Oli with Mascarpone and Spinach

  • Butter - ½ cup
  • Garlic, finely minced - 1 Tbsp + 1 tsp
  • Fresh spinach, finely chopped - 1 lb
  • Heavy cream - 2 cups
  • Mascarpone cheese - 1 lb
  • Chicken broth - 1 cup
  • Salt - 1 tsp
  • Black pepper - 1 tsp
  1. Melt butter and sauté garlic.
  2. Add remaining ingredients except the Grand-i-Oli and simmer stirring well and frequently for approximately 8-10 minutes or until desired consistency is obtained.
  3. Cook Grand-i-Oli according to package cooking direction.
  4. Place 1 Grand-i-Oli on a plate and drizzle 1 ounce of sauce.
  5. Place the other Grand-i-Oli on the other one overlapping it, drizzle with remaining 3 more ounces of sauce. Garnish with fresh rosemary leaves and serve.
  6. Yield: Approximately 1 quart of sauce.
