5 Cheese Grand-i-Oli with Mascarpone and Spinach
- Butter - ½ cup
- Garlic, finely minced - 1 Tbsp + 1 tsp
- Fresh spinach, finely chopped - 1 lb
- Heavy cream - 2 cups
- Mascarpone cheese - 1 lb
- Chicken broth - 1 cup
- Salt - 1 tsp
- Black pepper - 1 tsp
- Melt butter and sauté garlic.
- Add remaining ingredients except the Grand-i-Oli and simmer stirring well and frequently for approximately 8-10 minutes or until desired consistency is obtained.
- Cook Grand-i-Oli according to package cooking direction.
- Place 1 Grand-i-Oli on a plate and drizzle 1 ounce of sauce.
- Place the other Grand-i-Oli on the other one overlapping it, drizzle with remaining 3 more ounces of sauce. Garnish with fresh rosemary leaves and serve.
- Yield: Approximately 1 quart of sauce.
