Breakfast Burritos with Papaya and Mango Salsa

Ingredients for Salsa
  • 1 lb. Papaya, peeled, seeded, 1/2” dice
  • 3 lb. Mango, peeled, seeded, 1/2” dice
  • 2 oz Red bell pepper, fine dice
  • 2 Jalapeno, seeded, finely minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup orange juice
  • 2 Tbsp. Lime juice (from fresh lines)
  • 10 Breakfast burritos (either variety)

YIELD: 10 portions

Preparation :

  1. Place breakfast burritos on sheet pans, lightly brush with oil, cover loosely with foil.
  2. Bake in convection over set at 325° for 15-20 minutes from thawed, 25-30 minutes from frozen.
  3. Serve 1 breakfast burrito with 5-6 ounces of fruit salsa.
  4. Commercially peeled and ready fruit may also be used to cut down on labor.
