Carbonara Sauce

Ingredients
  • Extra Virgin Olive Oil - 1/4 cup
  • Butter - 1/4 cup
  • Scallions, 1/4” diced - 1/2 cup
  • Celery, finely minced - ¼ cup
  • Garlic, minced - 2 tsp.
  • Bacon, 1/4 diced - 1/2 lb.
  • Dry white wine - 3/4 cup
  • Heavy Cream - 1 quart
  • Parmesan cheese, grated - 1/2 cup
  • Black Pepper - 1 tsp.
  • Salt - 2 tsp.
  • Parsley, flat leaf, chopped - 1/4 cup

YIELD: Approx. 1 Quart

Preparation :

  1. Melt butter in olive oil, add scallions, celery, garlic & bacon.
  2. Add wine, simmer, reduce by half.
  3. Add cream, parmesan cheese, pepper and salt.
  4. Bring to a boil and simmer for 6-8 min. or until somewhat thickened.
  5. Add parsley and continue to simmer for 1 min.
