Carbonara Sauce
Ingredients
- Extra Virgin Olive Oil - 1/4 cup
- Butter - 1/4 cup
- Scallions, 1/4” diced - 1/2 cup
- Celery, finely minced - ¼ cup
- Garlic, minced - 2 tsp.
- Bacon, 1/4 diced - 1/2 lb.
- Dry white wine - 3/4 cup
- Heavy Cream - 1 quart
- Parmesan cheese, grated - 1/2 cup
- Black Pepper - 1 tsp.
- Salt - 2 tsp.
- Parsley, flat leaf, chopped - 1/4 cup
YIELD: Approx. 1 Quart
Preparation :
- Melt butter in olive oil, add scallions, celery, garlic & bacon.
- Add wine, simmer, reduce by half.
- Add cream, parmesan cheese, pepper and salt.
- Bring to a boil and simmer for 6-8 min. or until somewhat thickened.
- Add parsley and continue to simmer for 1 min.
