Eggplant Ravioli Rollatini
- Eggplant ravioli - 4 each
- Ricotta blend - 1 oz
- Shredded cheese - 1 cup
- Diced Italian vegetables - ¼ cup
- Marinara sauce - 5 oz
- Italian Bread crumbs - 2 Tbsp
- Blend ricotta, sausage, peppers, onions, pepperoni and cheese together.
- Place in eggplant pieces sheet and roll.
- Top with marinara and bread crumbs.
- Bake till desired temperature.
- Garnish.
- Serve.
