Crab Ravioli with Shrimp Étoufée

  • Butter - ¾ lb
  • Onion, finely diced - 1 ½ cupa
  • Shallots, finely diced - 1/3 cup
  • Garlic, minced - 2 tsp
  • Medium-large shrimp, raw, shelled - 5 lb
  • Salt - 2 tsp
  • Black pepper - 1 tsp
  • Cayenne pepper - ¼ tsp
  • Parsley, flat leaves, chopped - ¼ cup
  1. Melt butter and saute onion, shallots and garlic.
  2. Add shrimp, salt, black pepper and cayenne pepper, cover with lid and simmer over low heat for 10 minutes.
  3. Add parsley, cover and simmer for 3 more minutes.
  4. Garnish with parsley sprig and a lemon wedge.
  5. Serve.
