Crab Ravioli with Shrimp Étoufée
- Butter - ¾ lb
- Onion, finely diced - 1 ½ cupa
- Shallots, finely diced - 1/3 cup
- Garlic, minced - 2 tsp
- Medium-large shrimp, raw, shelled - 5 lb
- Salt - 2 tsp
- Black pepper - 1 tsp
- Cayenne pepper - ¼ tsp
- Parsley, flat leaves, chopped - ¼ cup
- Melt butter and saute onion, shallots and garlic.
- Add shrimp, salt, black pepper and cayenne pepper, cover with lid and simmer over low heat for 10 minutes.
- Add parsley, cover and simmer for 3 more minutes.
- Garnish with parsley sprig and a lemon wedge.
- Serve.
