Crab Ravioli Veronique

  • Butter - ½ cup
  • Shallots, finely minced - ¼ cup
  • White wine, dry - 1 ½ cupa
  • Lemon juice - 2 tsp
  • White grape juice - 1 cup
  • Water - 1 cup
  • Salt - 1 tsp
  • Black pepper - ½ tsp
  • Flour - ¼ cup
  • Seedless grapes, canned, drained - 1 lb
  1. Saute shallots in ¼ cup of butter.
  2. Add wine, simmer over low heat and reduce by half.
  3. Add lemon juice, salt, pepper and simmer 5 more minutes.
  4. Melt other 1/4 cup of butter and add the flour to make a roux.
  5. Incorporate roux into sauce and mix well.
  6. Add grapes and mix.
  7. Garnish with lemon slices.
  8. Serve.
