Crab Ravioli Veronique
- Butter - ½ cup
- Shallots, finely minced - ¼ cup
- White wine, dry - 1 ½ cupa
- Lemon juice - 2 tsp
- White grape juice - 1 cup
- Water - 1 cup
- Salt - 1 tsp
- Black pepper - ½ tsp
- Flour - ¼ cup
- Seedless grapes, canned, drained - 1 lb
- Saute shallots in ¼ cup of butter.
- Add wine, simmer over low heat and reduce by half.
- Add lemon juice, salt, pepper and simmer 5 more minutes.
- Melt other 1/4 cup of butter and add the flour to make a roux.
- Incorporate roux into sauce and mix well.
- Add grapes and mix.
- Garnish with lemon slices.
- Serve.
