Chili and Barbecue from Windsor. Chili, has a somewhat nebulous origin. Accounts say that Chili was the invention of the chuck wagon cooks of the great Southwest who traveled with the cowboys on long cattle drives. As the cowboys would traveled in one direction across the rugged desert and plains, the cooks would plant oregano, chiles, and onions among mesquite patches to protect them from the sun and foraging critters. When the cattle drive would return along the same trail, they would gather the spices and combine them with chopped beef calling it "Trail Stew" or "Trail Drive Chili." Meanwhile, barbecue (or as some would write it, BBQ) with its smoky, slow-cooked flavor smothered in sweet sauces, has been an American mainstay for centuries. Whether it's Southern-style or Midwest, the mere mention of "barbecue" evokes images of people gathering and partaking of tender and juicy meats.
